  • 8 small corn tortillas
  • ½ cup crumbled feta or cotija cheese
  • ½ cup chopped fresh cilantro
  • ¼ cup diced red onion
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and black pepper.
  3. Spread sweet potatoes on the baking sheet in a single layer; roast for 20–25 minutes until tender.
  4. While roasting, heat black beans in a small saucepan over medium heat until warmed through.
  5. Warm corn tortillas in a dry skillet or microwave until soft.
  6. Assemble tacos by dividing roasted sweet potatoes and black beans among tortillas; top with cheese, cilantro, red onion, and lime juice.
