  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup 35% cream
  • ½ teaspoon kosher salt
  • Whipped cream
  • Sea salt flakes

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. In a small bowl, mix chopped dates with baking soda; pour hot milk over them and let cool.
  3. Combine flour, baking powder, and salt in one bowl; beat eggs in another.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor until combined; gradually add dry ingredients and soaked dates until smooth.
  5. Pour batter into the prepared dish and bake for about 30 minutes until set.
  6. While baking, prepare the salty caramel sauce by melting butter and mixing with brown sugar and cream.
  7. Once baked, poke holes in the pudding, pour some caramel over it to soak, then serve with remaining sauce and whipped cream.
