  • 1 cup panko breadcrumbs
  • 1 onion (grated)
  • 2 cloves garlic (minced)
  • 1 egg (beaten)
  • 1/4 cup parsley (chopped, optional)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 2 zucchini (sliced)
  • 1 red bell pepper (sliced)
  • 2 tablespoons tomato paste
  • 1 cup warm tap water
  • 2 tablespoons olive oil (for drizzling)
  • 1/2 cup plain yogurt (for drizzling)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine ground lamb, panko breadcrumbs, grated onion, minced garlic, beaten egg, parsley (if using), and spices. Mix until well combined and form into golf ball-sized meatballs.
  3. In a baking dish, arrange spiral zucchini slices on the bottom followed by sliced bell pepper.
  4. Place meatballs on top of the vegetables and spread tomato paste evenly over them. Pour warm water around the edges.
  5. Drizzle olive oil over everything; cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cooked through.
  6. Serve warm with a drizzle of plain yogurt.
