  • 12 chicken breasts
  • 2 medium potatoes, cut into wedges
  • 1 small sweet potato, cut into fries (optional)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • Salt & pepper to taste
  • 2 medium tomatoes, chopped
  • 1 cucumber, chopped
  • Salt & pepper
  • Optional: splash of olive oil or vinegar
  • 1 cup plain yogurt (Greek or regular)
  • 1 tsp dried mint or dill
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rub chicken breasts with olive oil, oregano, garlic powder, chili flakes, salt, and pepper.
  3. Bake the chicken on a tray for 20-25 minutes until fully cooked.
  4. Toss potato wedges and sweet potato fries with olive oil, paprika, salt, and pepper; spread on another tray and roast for 25-30 minutes.
  5. Combine chopped tomatoes and cucumber in a bowl; season lightly with salt and pepper.
  6. Mix yogurt with dried mint or dill and minced garlic; chill until serving.
  7. Serve the roasted chicken alongside the potatoes, salad, and yogurt dip.
