  • 1 medium onion
  • 2 medium carrots
  • 2 celery stalks
  • 6 cups chicken broth
  • 1 cup small pasta (like ditalini)
  • Fresh spinach or kale
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Grated Parmesan and chopped parsley, for garnish

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, egg, garlic, parsley, salt, and pepper; form into meatballs.
  2. Heat olive oil in a large pot over medium heat; brown meatballs on all sides and set aside.
  3. Sauté diced onion, carrots, and celery until softened; add minced garlic.
  4. Pour in chicken broth and diced tomatoes; stir in Italian seasoning and red pepper flakes.
  5. Return meatballs to the pot; simmer for 15-20 minutes. Add pasta for the last 8-10 minutes of cooking.
  6. Stir in spinach or kale until wilted; season to taste before serving.
