  • 80g milk arrowroot biscuits
  • 20g butter or coconut oil
  • 150g light cream cheese
  • 160g vanilla protein yogurt (no added sugar)
  • 1 large egg
  • 2 tablespoons cocoa powder
  • 2 tablespoons monk fruit sweetener or brown sugar
  • 1 tablespoon Nutella (plus extra for topping)
  • Crushed hazelnuts (for garnish)

Instructions

  1. Preheat the oven to 160°C (320°F) and lightly grease a muffin tin.
  2. In a food processor, blend milk arrowroot biscuits and softened butter/coconut oil until crumbly. Add water until a soft dough forms.
  3. Divide the mixture into muffin cups, pressing firmly to form the crust.
  4. In a mixing bowl, combine light cream cheese, vanilla protein yogurt, egg, cocoa powder, monk fruit sweetener/brown sugar, Nutella, and tapioca flour. Mix until smooth.
  5. Pour the filling over each crust and bake for 25 minutes until set with a slight jiggle.
  6. Cool at room temperature for 30 minutes before refrigerating for at least 3 hours.
  7. Serve topped with melted Nutella and crushed hazelnuts.
