  • 2 cups fresh sweet cherries, pitted
  • 2 cups ripe yellow peaches, sliced
  • 1/2 cup light brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp tapioca starch
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 68 tbsp ice water
  • Coarse sugar for sprinkling

Instructions

  1. Make the crust by blending flour and cubed butter until crumbly. Gradually add ice water until a dough forms. Chill for 1 hour.
  2. Mix cherries, peaches, brown sugar, lemon juice, vanilla extract, and tapioca starch in a bowl; let sit for 10–15 minutes.
  3. Roll out half of the dough into your pie dish and fill with the fruit mixture.
  4. Roll out the remaining dough and cut into strips to create a lattice top over the filling; crimp edges to seal.
  5. Brush with an egg wash and sprinkle coarse sugar on top.
  6. Bake at 400°F (200°C) for 45–55 minutes until golden brown.
