  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional)
  • 1/4 cup olive oil
  • 1 tablespoon chili flakes
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large skillet over medium-low heat, combine olive oil and butter. Add sliced onions and a pinch of salt; cook for 25–30 minutes until golden brown.
  2. Boil salted water in a large pot; cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  3. In the same skillet as the onions, add more olive oil, garlic, chili flakes, and salt; cook for about 1 minute until fragrant.
  4. Stir in drained pasta and reserved water as needed to reach desired consistency. Toss well to combine.
  5. Serve hot, garnished with parsley and additional chili oil if desired.
