  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • 3 tablespoons butter (for cinnamon sugar coating)
  • ¼ cup sugar (for cinnamon sugar coating)
  • ½ teaspoon cinnamon (for cinnamon sugar coating)
  • ½ cup unsalted butter (for filling)
  • 1 ¼1 ½ cups powdered sugar (for filling)
  • 1 pinch salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and reduce the apple cider in a saucepan until it measures 1/4 cup; let cool.
  2. In one bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat together butter and sugars until creamy. Add eggs and vanilla; mix well. Stir in cooled cider and apple butter/applesauce.
  4. Gradually add dry ingredients until just combined.
  5. Drop tablespoon-sized mounds onto parchment-lined baking sheets about 3 inches apart.
  6. Bake for 11–13 minutes until cookies spring back when touched. Cool on racks before filling.
